Latke-Style Smashed Potatoes with Vegan Horseradish Sauce
Serves: 2
Ingredients:
Latke Style Smashed Potatoes:
-6 Small Yukon Gold Potatoes
-1/2 a sweet onion, diced
-Sea salt and freshly ground black pepper to taste (SOS-Free version: omit salt)
Vegan Horseradish Sauce:
-1/2 a block of silken tofu (about 6-8oz)
-2 Tablespoons of lemon juice
-1 Tablespoon of horseradish
-1 1/2 teaspoon of apple cider vinegar
-1 teaspoon of date sugar (dehydrated dates)
OR
-Top with unsweetened applesauce
Instructions:
Latke-Style Smashed Potatoes:
1. Boil or microwave the potatoes until soft (boiling helps to retain moisture)
2. Saute the onions in a little water until they begin to soften
3. Smash your potatoes into the dry pan with the onions and cook over medium low heat until brown
4. Flip and let the other side crisp up and brown
Vegan Horseradish Sauce:
1. Blend ingredients together until smooth and drizzle over finished potatoes
