Eating a whole food plant-based diet does not mean forgoing brunch. This Sunday enjoy an old favorite (with an oil-free twist). And you may be asking yourself, wait a second, are potatoes healthy?
But here's the deal: like many carbs, potatoes get a bad rap. But they’re not unhealthy...it’s just they’re usually smothered in oil, cheese, and butter. These oil-free home fries are baked fresh with veggies and spices. Enjoy!
Prep Time: 20 minutes
Cook Time: 50 minutes
Yield: 4 servings
Ingredients:
3 russet potatoes, cubed
1 onion, diced
3 cloves of garlic, minced
Sea salt
Black Pepper
Garlic Powder
Paprika
A few handfuls of spinach
Instructions:
- Preheat oven to 400 degrees
- Dice potatoes, and blanch for 10 minutes in boiling water
- Pat dry, spread out on a nonstick baking sheet (with parchment paper or a silicone mat), season with black pepper, paprika, and garlic powder
- Bake potatoes on 400 for 40 minutes or until crispy
- In a non-stick sauce pan, sauté onions and garlic for 10 minutes, while continuously adding a few TBS of water to prevent sticking
- Season veggies with sea salt and black pepper
- After 10 minutes, stir in spinach and set aside
- Once potatoes are done baking, season with black pepper and sea salt
- Add potatoes to sauce pan with veggies, stir together and enjoy hot
