Ingredients:
2 tsp of tahini
Pinch of salt
1/3 tsp of maple syrup (or date syrup)
I large cabbage leaf (red or green)
1 tbs of green onion, chopped
1 carrot, grated into long strips with a peeler
¼ of a diced red pepper
½ cup of cooked quinoa
Juice from ½ of a lime
Directions:
- Mix tahini, salt and maple syrup together, and set aside
- Line a small bowl with the cabbage leaf
- Fill the cabbage leaf with the veggies and quinoa
- Add the dressing and lime juice, and mix with a spoon
- Remove the cabbage leaf from the bowl and wrap like a burrito
- Enjoy
