Potato Salad
4 cups of baby potatoes (of any variety), diced into large chunks
1 cup of black olives (canned, pitted)
1 cup of green olives (canned, pitted)
¼ cup of capers
1 can of artichoke hearts, rinsed and diced
½ teaspoon of oregano
3 Tablespoons of balsamic vinegar
Whole Food Plant-Based Mayo
1 ripe avocado (get our tips for picking the best ripe avocado)
½ teaspoon of sea salt
½ teaspoon of garlic powder
1 Tablespoon lemon juice
1 Tablespoon Dijon
a dash of black pepper
a few Tablespoons of water
Cooking Instructions
Boil until tender…
Potatoes with just enough water to cover (4-6 minutes)
Meanwhile, blend together…
All the dairy-free mayo ingredients
Cut into bite-sized pieces
Artichoke hearts
Mix together in a big bowl
Hot cooked potatoes, dairy-free mayo, vinegar, and oregano
