Ingredients:
1 cup of quinoa
2 cups of water
2 carrots, peeled and diced
2 ribs of celery, chopped
1 red pepper, chopped
1 can of organic white beans, rinsed and salt-free
For the Buffalo sauce:
1/2 cup tomato paste
3/4 cup water
2 TBSP maple syrup
1 tsp garlic powder
1/4 tsp cayenne pepper
Instructions:
1. Bring 1 cup of uncooked quinoa and 2 cups of water to a boil then cover and reduce heat to low for 15-20 minutes until quinoa is fluffy
2. Mix quinoa with chopped veggies and beans and stir in buffalo sauce
