This chickpea scramble makes the perfect vegan brunch, especially for those who typically opted for eggs before transitioning to a plant-based way of life. Have this chickpea scramble with avocado toast, toss in a burrito, or enjoy as a breakfast taco. The possibilities are endless.

Ingredients:
1 onion, chopped
2 cloves garlic, minced
1 can chickpeas, rinsed and drained
1 tsp turmeric
¼ cup water
2 handfuls spinach
OPTIONAL:
green onion
½ sliced avocado
salsa
Instructions:
1. Saute garlic and onion with water for 3 minutes
2. Rinse and drain chickpeas. Mash about half of them in a bowl (you can use a fork or a tomato masher)
3. Add chickpeas, turmeric, and a little more water and saute for 5
4. Add spinach and stir until wilted. Enjoy!
