I've been on a bit of a plant-based dessert kick. And after you try these honey lemon broiled pears, I think you will be, too. The contrast between the warm and tangy roasted pears and the creamy and cold ginger dairy-free ice cream creates a perfect flavor sensation in your mouth. This plant-based dessert is a great end to any meal, or just makes for a comforting rainy (or snowy) day treat. If you don’t use honey, try drizzling your pears and ice cream with maple syrup of agave instead.

Ingredients:
2 pears, halved
½ a lemon, juice and rind
a few TBSP of raw honey
a dash of sea salt
a few TBSP of chopped walnuts
2 bananas, frozen overnight
½ a tsp of finely minced ginger
Instructions:
- Slice pears in half and remove the seeds
- Cut a few thin slices of lemon and place pears (cut side up) and lemons in a baking dish
- Drizzle pears with lemon juice, a TBSP of honey (or agave/maple syrup), sea salt, and walnuts
- Broil on a low broiling temperature until nuts brown (about 7-10 minutes, keep an eye on them so the nuts do not burn)
- Blend together in a food processor frozen bananas, a TBSP of honey, and ginger until creamy smooth
- Once pears are done, remove them from the oven and place on a plate topped with a scoop of the ginger ice cream, another drizzle of honey, and a sprinkle of lemon rind
- Enjoy before the ice cream melts!
