I don’t know about you, but I’m always looking for a quick and easy plant-based breakfast. One that will ACTUALLY keep me full until lunch. Fill up on on this chipotle black bean avocado toast. It'll power you through your busy morning and give you enough energy to get you through to lunch.

Yield: 4 servings
Ingredients:
2 pieces of whole-wheat toast
1 can of black beans
¼ a tsp of chipotle spice
1 tsp of garlic powder
a pinch of sea salt
a pinch of black pepper
1 lime, juiced
1 avocado, diced
½ a tomato, diced
¼ a cup of corn
a few TBSP of fresh cilantro
3 TBSP red onion, finely chopped
Instructions:
- Mix together: beans, chipotle spice, garlic powder, a pinch of sea salt, a pinch of pepper, and the juice from ½ a lime. Boil until thick and starchy (about 15 minutes)
- Mix together in a bowl: avocado, tomato, corn, cilantro, red onion, the juice from ½ a lime, and salt and pepper
- Toast 4 pieces of whole wheat bread, and spread black bean mixture onto the toast
- Top with avocado mixture, and enjoy!
