Bonus tip: Feeling stressed over the holidays and need some “treat yourself” time? Set aside some mashed Japanese sweet potatoes (before adding plant-based milk, and syrup) and use it as a facemask! It will rejuvenate your skin, and leave you feeling refreshed and ready to take on any extended family visits, snow shoveling, shopping trips, and holiday cooking you might be overwhelmed by!

Yield: 6-8 servings as a side
Suitable for: plant-based diet, vegan diet, anyone!
Ingredients
2 Japanese sweet potatoes
1/2 cup of fire raisins
1/2 lemon
1 cup of almond milk/coconut milk/soy milk
3/4 cup chopped pecans
5 TBS of maple syrup
1 TBS cinnamon
A pinch of sea salt
Instructions
- Soak fire raisins in the juice from ½ a lemon, and hot water
- Peel, cut up, and boil Japanese sweet potatoes (like you would russet potatoes), this should take between 10-15 minutes
- Stir together pecans, 1 TBS of maple syrup and a pinch of sea salt
- Spread pecan mixture out on aluminum foil, and bake for 10 minutes on 350
- Once potatoes are soft, transfer them to a food processor, and add your plant based milk, and ¼ a cup of maple syrup
- Blend until smooth
- Stir in (strained) raisins, and top with candied pecans
- Enjoy!
