Looking for a refreshing and crunchy appetizer for your summer cookout? These roll-ups are sweet, salty, and healthy, to boot! They're a great source of fiber, protein, and vitamins A and C. Not to mention, these raw vegan cucumber rolls are absolutely beautiful! Topped with a savory peanut sauce, these summertime munchies can be eaten with chopsticks or as finger food. Enjoy!
Prep Time: 20 minutes
Yield: 15-20 rolls (serves 4)
Ingredients:
1 European cucumber
1 large carrot
1 avocado
a few TBS of sesame seeds
Sauce:
2 TBS all natural peanut butter
¼ tsp garlic powder
¼ tsp minced ginger
1 tsp honey or agave
1 tsp tamari
a splash of coconut milk
Instructions:
- Make thin lengthwise slivers of cucumber and carrot with a vegetable peeler
- Dice the avocado into small, think chunks
- Lay 1 lice of cucumber down, and line with sliced carrot
- Add about 5 avocado chunks on top of the carrot
- Roll up into a thin spiral (similar to sushi)
- Repeat, until you have used up your cucumber, carrot and avocado
- Sprinkle with sesame seeds
- Whisk together sauce ingredients, and drizzle some of the sauce over the roll-ups
- Spoon the remaining sauce into a dish of dipping
- Enjoy
